Lemon "Patti Cakes"

Alrighty. So for my first real food related post, I will attempt something...easy. Not that I'm not up to the challenge of other things, but because I'm new at this whole baking/cooking thing, I need to start small. This first creation is not an original, but I did make some modifications and it was so good.

I present to you:
"Patti Cakes"

I put the name in quotes because I adapted this recipe from TREATS, anothoer food blog that I discovered through foodgawker. The author has a cute story about where she got the name and the recipe.
As you may have noticed from the ingredients, this is not made from scratch *gasp!* But either way, it is an AMAZING recipe that deserves to be tried at least once. It has 4 simple elements and does not take much time at all. I added one more just to change the recipe up a little bit.
Real lemon! I realize the cake mix is probably made with natural and artificial flavors but there is something nice about being able to see those flavors go into it yourself.

Here we go:
1 package of cake mix (18.25oz)
1 large egg
1/3 cup of oil
2 tbsp water
1 tbsp lemon juice (about 1/2 a lemon squeezed)
powdered sugar (as needed)
Process:
Preheat oven to 350 and line your baking sheets with parchment paper. I didn't have any, so I used foil.
Get your cake mix, oil, water, lemon juice, and egg well acquainted with each other (mix them in a bowl until they're nice and smooth).
This next part depends on how many cookies you want to make. I made 30 good sized (about 2 inch diameter) cookies by scooping the dough with a tablespoon. So you can make them pretty much any size you want.
Here's where the powdered sugar comes in. After you form each cookie ball thing, dip the top in sugar and place on your cookie sheet like so:


Leave about 1.5 inches between cookies and let them bake for 7 minutes, then rotate the cookie sheets and give them another 7 minutes. When they come out, they should look something like this:


And that's it! You're done!
They have a really yummy tart flavor. I think the addition of lemon adds to that but it is even'd out by adding powdered sugar. If you don't want them to be overwhelmed try dusting them with the sugar. It looks a lot nicer than baking them with the sugar on and tastes great.
